Description

Maltodextrin is a food additive, a polysaccharide derived from vegetable starch through partial hydrolysis. This process produces a white, hygroscopic (moisture-absorbing), spray-dried powder. It’s easily digested and rapidly absorbed by the body, similar to glucose.

Structurally, it is composed of D-glucose units linked in various ways. The FDA has recognised maltodextrin as a safe food additive. The sweetness of maltodextrin correlates with its solubility; the sweeter it is, the more soluble and the less heat-resistant it becomes.
